Wine Vinegars and Balsamic Vinegars
Wine vinegars and Balsamic vinegars make great salad dressing with a kick of zest.  The standard proportion for vinaigrette is three parts oil to one part vinegar.  Make sure to season the vinegar with salt and herbs to bring out the flavor of the salad.

Savory Brown Rice
Brown rice 1 cup (yields 5 servings of 3/4 cups)
1/2 Tbl Savory seasoning
1 chicken bouillon cube or packet
2 cloves garlic (peeled and fine chopped or use garlic press)
1/4 cup finely chopped onion
2 Tbl olive oil
 
Combine oil, garlic and onion in  a non stick saute' pan until sizzle (Do not let garlic turn brown)
Carefully pour in 2 1/2 cups water and bring to boil
Stir in rice, savory seasoning and chicken bouillon
Cover tightly, reduce heat and simmer 45 minutes or until water is absorbed
 
Note:  For dryer rice use 1/4 cup less water.  For moister rice, use 1/4 cup more water.

Easy Mexican Black Bean Burrito
Ingredients:
 
1 16oz black beans
1 Tbl olive oil
1/4 med. onion
2 cloves garlic
soft tortilla (corn or flour)
lettuce
chopped tomato
shredded jack cheese (or your favorite cheese)
sour cream
 
Preparation:
 
Heat  in skillet, 1Tbl olive oil add onion and garlic until light sizzle occurs then add black beans until thoroughly heated.  Place soft torilla on plate, add desired amount of bean mixture.  Warm tortillas and top each with lettuce, tomato, cheese, sour cream.  Fold tortilla over the ingredients and enjoy the experience!

Candied Yams Southern Style
5 med. Sweet potatoes
butter
maple syrup
nut meg
cinnamon
vanilla extract
brown sugar
 
Preparation:
 
Boil potatoes in large pot with 1" water over potatoes.
Cook just until fork can pierce skin, cool in ice bath to stop cooking process.
Peel and slice 1/2 " thickness and place in baking dish
Pour 1/3 cup vanilla extract over potatoes
Pour 1/4 cup maple syrup over potatoes
Sprinkle 2 Tbl cinnamon evenly over potatoes
Sprinkle 1 tsp. nut meg evenly over potatoes
Sprinkle 1 cup packed brown sugar over potatoes
Slice buttter into pieces use 1/2 of a stick and place intermittently over potatoes
Bake at 350 for approximately 20-25 mins. Uncover after first 15 mins and let brown.

Saturday Morning Omelett
Ingredients:
 
red onion
sweet pepper (red,orange or green)
scallion (aka green onion)
cheese (cheddar,american,munster,pepper jack,mozzerrela, provalone,swiss, etc.)
eggs
milk or cream
left over chicken, turkey, ham, steak
tomatoes (optional)
 
Preparation:
 
Dice 1/4 med. red onion
Dice 1/4 med. pepper (red,orange or green)
Thinly slice 1 stalk of scallion (green onion)
Grate or slice 2 oz cheese
4 oz diced or cubbed meat (chicken, turkey, ham or steak)
Dice 1/4 small tomato (take seeds out)
Beat 4 eggs (can use whites only)
1/4 cup milk or cream
Mix all ingredients together in large bowl.
Prepare omlette pan using 2 pats of butter, olive oil or cooking spay to non stick surface.  Once pan is heated add mixture and let cook for approx. 2 mins. and flip over for additional 1 1/2 min.

Quick-N-Easy Chinese Stir Fry
Ingredients:
 
Hot Sesame Oil or Olive Oil ( for low fat-optional chicken broth)
Garlic
Chinese String Beans
Broccoli
Bell Pepper (Orange, Yellow, Green)
Scallions or Onions (Red or Sweet)
Zucchini
Carrots (Baby)
Meat  (Pork, Chicken, Beef, Shrimp)
Your favorite stir fry sauce (garlic,ginger or teriyaki)
 
Preparation:
 
Heat 2 Tbs Hot Sesame oil or olive oil add meat and cook to desired wellness (set aside in bowl)
Heat  2 Tbs Hot Sesame oil or olive oil (optional 4oz chicken broth)
Add 4 cloves chopped garlic til light sizzle
Add Carrots and Broccoli until cooked but crisp
Add remaining veggies approx. 2 mins.
Add Meat  and sauce to mixture
Stir Fry and Enjoy!

10 Minute No-Cook Banana Pudding Pie
Ingredients:
 
2 cups Nilla Waffers or Chocolate Waffers
1 box no-cook banana pudding mix or vanilla pudding mix
1 large banana
half and half
4 tablespoons butter, melted
 
Preparation:
 
Crush waffers and mix with butter.  Press mixture into bottom on casserol dish
Make pudding according to directions on box, use half and half instead of milk
Use electric mixer until pudding is thick
Add mixture into pie crust
Place waffers and banana slices on top
Cover with plastic and refrigerate (plastic wrap will help keep bananas from turning brown)
Chill 2 hours           Dig In......Enjoy!
 
Ideal Dish:

The Island Way Shrimp Salad
Ingredients:
 
1 small jicama, peeled and cut into strips
2 kiwi fruits, peeled and sliced
3 oranges( optional 2 grape fruits)
2 cups mesclun
1 teaspoon extra-virgin olive oil
1 tablespoon lime juice
1 tablespoon fresh chopped mint
2 teaspoon honey
1/4 teaspoon kosher salt
dash of jerk seasoning
1 pound medium shrimp, peeled, deveined and cooked
 
Preparations:
 
1.  Line platter with mesclun.  Peel and thinly slice the grapefruit over the bowl to catch the juice.  Then arrange the fruit slices, shrimp, kiwi slices and jicama strips over the mesclun.
 
2.  Whisk the oil, mint, lime juice, honey, salt, and jerk seasoning into the grapefruit juice.
Drizzle over the salad.  Serves 4
 
Ideal Presentation:

Grilled Eggplant Tomato-N-Cheese Panini
1/4 inch peeled and sliced eggplant
1/4 inch sliced beefsteak tomato
Provolone cheese slices (optional spicey jack or swiss)
Rye bread
1/4 tsp. garlic powder
1/4 tsp. onion powder
salt and pepper (fine ground)
butter spray
olive oil spray
bacon bits (optional)
 
Combine garlic powder, onion powder, salt and pepper to taste in plastic zip lock bag
Spray each eggplant lightly on both sides, place into zip lock bag
Shake until eggplant is evenly coated with mixture
In preheated saute' pan cook each eggplant for approximately 2 minutes each side, set aside until all eggplants are cooked (cook 2 slices of eggplant for each sandwich you wish to make)
 
Layer sandwiches:  1 rye bread, 1 slice cheese, 2 eggplants slices, Tbl bacon bits, 1 slice tomato, 1 slice cheese and top with rye bread.  Spray both sides of sandwich with butter spray and place sandwich in preheated panini grill.  Cook until golden brown.      ENJOY!

Freezing Fruit
When using fresh berries in a batter whether for muffins or cake, for best results freeze fruit for at least 1 hour prior to mixing them in.  This will help prevent the delicate fruit from breaking during stirring, which will streak the batter.
